Ingredients

  • 1 ¾ cup all-purpose flour
  • 2 teaspoons baking powder

  • 3 eggs, separated
  • 1 ¼ cups whole milk
  • 2 1/2 sticks unsalted butter, browned and cooled. (1 cup for the waffles, 1/4 cup for serving)
  • ½ of a sweet apple, cored and grated (Fuji, Gala, Ambrosia, or Honeycrisp)

  1. In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, apple pie spice, and brown sugar.
  2. Stir in egg yolks, milk, and cooled melted butter just until combined. Small lumps are fine.
  3. In a separate bowl, use a hand mixer to beat the egg whites until soft peaks form.
  4. Gently fold in the egg whites with a metal spoon, then fold in the grated apples.
  5. Brush a little of the reserved brown butter on a waffle maker or smaller waffle iron before you pour the waffle batter in.
  6. Cook until golden brown, about 3 to 5 minutes depending on your waffle maker.
