Ingredients
  

Dry Ingredients:

  • 2 cups Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar

Wet Ingredients:

  • 2 large eggs or flax eggs for a vegan option
  • 1 3/4 cups milk or any non-dairy milk such as almond milk or oat milk
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter or avocado oil/canola oil for a dairy-free alternative
  • 1 tablespoon maple syrup

Instructions
 

  • Preheat the waffle iron and lightly grease it.
  • Mix the dry ingredients in a large bowl.
  • Whisk the wet ingredients in a separate bowl until combined.
  • Combine wet and dry ingredients gently, leaving small lumps for fluffier waffles.
  • Cook the waffles—pour about 1/2 cup of batter onto the waffle iron and cook for 3-5 minutes until golden brown.
  • Keep warm in a 200°F oven if making a big batch.

Notes

  • If making a large batch, keep cooked waffles warm in a 200°F oven until ready to serve.
  • Leftover waffles can be frozen and reheated for a quick breakfast.
  • To make dairy-free, substitute melted butter with avocado or canola oil and use non-dairy milk.
