Simple and Refreshing Frozen Pineapple & Grape Salad

A perfect blend of cream cheesefresh grapes, and pineapple that’s easy to make and always a crowd-pleaser. Freeze, slice, and serve for a refreshing treat on hot summer days. The whole family will love it!

Ingredients
  

  • 1 8 oz. package cream cheese, room temperature
  • 2 tablespoons mayonnaise
  • 2 tablespoons pineapple juice use juice from pineapple bits can
  • 1 medium can pineapple tidbits drained
  • 2 cups mini marshmallows
  • 1 cup fresh seedless green grapes halved
  • 1 cup fresh seedless purple grapes halved
  • 1 cup cool whip

For Garnish (Optional)

  • ¼ cup pecan pieces
  • ¼ cup sliced grapes
  • ¼ cup mini marshmallows
  • ¼ cup pineapple tidbits

Instructions
 

  • In a large bowl, beat cream cheese with a mixer until smooth. Add mayonnaise and pineapple juice and continue to mix until combined.
  • Add the pineapple bits, marshmallows, and grapes (both red and green) and fold gently into the mixture.
  • Fold in the cool whip until fully incorporated.
  • Pour the mixture into a 7x11 or 8x10 casserole dish and smooth with a spatula, pressing lightly into all corners and across the top.
  • Cover with plastic wrap or foil and place in the freezer. Freeze for at least 2 hours before serving.
  • Before serving, remove from the freezer and let sit at room temperature for 10-15 minutes. Use a sharp knife to cut into equal squares.
  • Garnish with your choice of pecan pieces, sliced grapes, marshmallows, and pineapple tidbits.

Notes

Cutting while the salad is still frozen ensures neat slices. If you prefer, it can be scooped out with a spoon once it softens
