Easy Bob Evans Copycat Cherry Bread Recipe

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cherry juice you can use maraschino cherry juice if you prefer
- 1/4 cup orange juice
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup maraschino cherries chopped
- 1/2 cup fresh or frozen cherries pitted and chopped
- Optional: 1/2 cup mini chocolate chips
Prep: Preheat oven to 350°F. Grease or line a 5”x9” loaf pan.
Dry Ingredients: In a large bowl, whisk flour, baking powder, baking soda, and salt.
Wet Ingredients: In another bowl, whisk brown sugar, white sugar, sour cream (or Greek yogurt), melted butter, cherry juice, orange juice, vanilla, and eggs until smooth.
Combine: Gently mix wet ingredients into the dry mixture, avoiding overmixing.
Add Cherries & Chocolate: Fold in maraschino and fresh cherries, and chocolate chips if desired.
Bake: Pour batter into the loaf pan and smooth the top.Bake for 45-55 minutes, tenting with foil if it browns too quickly. Cool: Cool in the pan for 10 minutes, then transfer to a wire rack. Wrap leftovers in plastic wrap to store.
